Collard Greens with Kielbasa

Ingredients
1 lb smoked kielbasa, cut lengthwise in half, then sliced diagonally
1 Tbs vegetable oil
1/2 large yellow onion, sliced
2 large bunches collard greens, stems removed and chopped into 2-inch pieces
3 Tbs apple cider vinegar
1 tsp hot pepper sauce
1 cup less-sodium chicken broth
Directions

1. In large saucepot, cook kielbasa over medium-high heat 5 minutes or until browned, stirring occasionally. With slotted spoon, transfer kielbasa to bowl.

 

2. Reduce heat to medium; add oil and onion to saucepot and cook 5 minutes or until onion begins to soften, stirring occasionally. Add greens and cook 5 minutes or until greens begin to wilt, stirring frequently. Stir in vinegar and hot pepper sauce; cook 1 minute, stirring frequently.

 

3. Stir in broth and kielbasa; cover and cook 15 minutes or until desired tenderness, stirring occasionally.
